If you have been invited to a barbecue or party but you want to really wow your family and friends you should bring this lemon chess pie. It has the tartness and sweetness of a lemon bar but the crust is more flavorful!
This Lemon Chess Pie is the exact thing as a lemon bar but the crust is made slightly different and the filling is thicker – think of a Lemon Curd Pie but with a Jello-Like filling and a tartness to it.
Everyone who tries this raves about it; especially that buttery crust that we just can’t get enough of. One of the best things about the Lemon Chess Pie is that you can leave it outside the fridge without it going bad.

This recipe makes enough for two eight inch pies but you can double the ingredients if you need more. It is a good idea to blend the eggs and sugar until it is light and foamy to make sure the pie turns out just right. You can put foil on the edges of the crust when baking to keep it from getting too done. This takes about forty-five minutes to bake but it will be worth the wait because the taste is fantastic!
