I love this recipe! The first time I cooked it, the wild rice was still a little bit stiff, even after soaking for nearly 7 hours, so the second time I cooked it, I put the whole works in the crockpot for a few hours after it was all mixed together, and it was DELICIOUS! My husband even liked it, and he is not a big fan of wild rice/chicken dishes.
My Dad and his girlfriend loved it too, as did my Mom. I will definitely make this again and again. It froze beautifully, so I pull out one serving at a time for my lunch and microwave and stir until it’s warm enough to eat. Yum!
Cooler weather is here…time to pull out the ever-faithful slow cooker! We love a good slow cooker meal, especially because the whole house smells delicious and inviting, and it means less work for us! One of our favorite meals is a creamy chicken and wild rice soup. It’s so easy to make and often we already have most of the ingredients on hand in the fridge and pantry. Throw everything into the slow cooker and come home to a comforting bowl of this hearty soup.
This soup is awesome. Instead of soaking the wild rice overnight I just precooked it then added it to the soup mixture. Besides being a hardy meal, it is super easy. It goes great with homemade wheat bread.
We keep the base of our soup fairly traditional, with carrot, celery, and onion, then add a bit of heartiness with wild rice and a touch of half-and-half for creaminess. And don’t forget a slice of crusty bread to help scoop up any extra broth! We also love any leftovers heated up for lunch the next day. This meal is super simple to prepare and definitely easy to eat – our two favorite ingredients to any meal! Grab that slow cooker and get cooking!
YUM! Very good flavor. I made this in a crockpot. Julienned the carrots and used sour cream instead of the milk. Added thyme and a bay leaf for added flavor. Everyone loved it!!!!
