My son was the star of his high school football team. By his junior year, he had recruiters from various colleges wanting to meet with him. Some would go to the school, others would talk with him at practice, and those that we were really interested in, got invited over for dinner. We wanted to make a good impression on a few, and we wanted to be able to have enough time to talk with them and get all of our questions answered. I had to make a couple of dishes for those nights, and I had to make it nice.
Chicken cordon bleu is always an elegant dish to serve, but I didn’t want to try and make it the traditional way. I just knew that I would mess that up. I am not the neatest person when it comes to cooking, let’s just say that. I found a recipe for a casserole with the same name on Julie’s Eats & Treats, so that’s what I did for our top pick.
The recruiter couldn’t stop talking about how good dinner was, and I think that helped to get him to stick around just a little bit longer. That was the school my son picked, and he continued on with a super successful college football career.
